We create the zone and add our three nameservers. They answer at 17 locations.

No. With the email forwarding included in every domain, mail to info@ and other addresses lands in your existing mailbox. You get your own mailboxes with an email package.

Yes. Once the domain is in your account, you import your records as a zone file, up to 5,000 per import. If it is still elsewhere, transfer it first with the transfer code.
